Vince Galati, the founder of Galati's Pizza and Pasta, grew up in Norridge, IL. After graduating from high school at the age of 18, he left home and moved to live with his uncle in Oshkosh, Wisconsin. There, Vince worked side by side with his uncle, who owned and operated a local restaurant, providing Vince with valuable knowledge and experience. He worked with his uncle for a year and a half before returning home.

Upon his return, Vince purchased his first pizza place, retaining the name Varro's Pizza. This establishment was located at the corner of Knollwood Rd and Bode Rd in Schaumburg, IL. He operated this location from 1987 to 1994. While running Varro's Pizza, he also opened his second location in 1992, named Pizza Junction, in Cary, IL. He later rebranded this establishment as Galati's and operated it until 1998. Vince then expanded to his third location on Spring Street in Cary, IL, from 1998 until November 2014.

In 2014, Vince expanded once again, opening his fourth location at 800 Feinberg Ct, Cary, IL. This new spot allowed him to offer a larger dining room and bar, in addition to banquet and party rooms, enhancing the customer experience. To this day, the business continues to operate successfully at this location.
